Blueberry and Banana Baked Oatmeal

Yes! Last night I finished all I had to do for class. You don't understand this almost never happens...so early on a Saturday night. But you never know, I may have forgotten something...that always happens. I was going to post a food-post but I was feeling very up-and-at-it this morning so I made this...

Blueberry and Banana Baked Oatmeal
T'was delicious and very healthy! I recommend leaving it in the oven a little longer than I did for an extra crunch. This week I hope won't be too busy, mardi gras is in two days and well I wish I was in NOLA doing some sort of celebration or just not slaving away at school. Awesome.


Blueberry and Banana Baked Oatmeal

Ingredients:
  • 2 medium ripe bananas sliced into halves
  • 1 1/2 cup blueberries
  • 1 1/2 teaspoon honey
  • 1 cup uncooked quick oats
  • 1/4 cup sliced almonds
  • 1/2 tsp baking powder
  • 3/4 tsp cinnamon
  • pinch of salt
  • 1 cup milk
  • 1 egg
  • 1 tsp vanilla extract
Directions:

Preheat oven to 375F. Butter an 8x8 baking pan. Next get your bananas and slice them into halves, place bananas onto buttered pan. Spread some blueberries on top of bananas, and add 1/4 teaspoon cinnamon, and 1 teaspoon of honey, cover with foil and bake for 15 minutes.

While that bakes in a mixing bowl, mix oats, half of the almonds, remaining honey, and cinnamon, and salt, mix well together. In another mixing bowl whisk together the milk, egg, and vanilla extract.


Remove bananas from the oven, and pour the oat mixture over it. Also pour over the oat mixture the milk mixture. Sprinkle blueberries and remaining almonds and bake for 35 minutes, or until it's golden and crispy to your liking.

Breakfast served!!

 You can most certainly accompany this with eggs or waffles or both! Also you can and perhaps you should add some sugar which I didn't add other than the honey, for health reasons.
