Peanut Butter Bites

I love me a good peanut butter cookie. Actually, for awhile I had allergic reactions to peanuts when I was in high school, it was strange one afternoon I was fine eating peanuts when all of a sudden I felt like I couldn't breathe. Ugh, well life has changed--thank God since then, now I can enjoy a peanut! And since then I've held a soft spot for all things peanut butter! For the longest time Brian has been asking me when I would make some PB cookies. But for one reason or another I just couldn't decide on which recipe to use! So I created one all on my own. These peanut butter cookies are bite size, crunchy, very flavorful like roasted peanuts.

Proud moment indeed, I got into a peanut butter flow that I made another recipe, but that one I shall share another day ;) For now enjoy this one which is very easy!

Peanut Butter Bites

Ingredients

• 1/2 cup sugar
• 1/2 cup peanuts finely crushed
• 3 tablespoons peanut butter (crunchy or creamy, I used creamy)
• 1 egg
• 1 1/4 cups flour
• 1/3 cup oil
• 3/4 teaspoon baking soda
• 1/2 teaspoon baking powder
• 1/4 teaspoon salt

 Directions

Preheat oven to 375F and in a large bowl mix all your dry ingredients, add the peanut butter and combine well, then add the finely crushed peanuts and then lastly add the egg. Only fold in the egg enough that it covers the batter, do not over mix. Let the batter stand for 5-10 minutes. Now cover a cookie sheet with parchment paper and from the bowl using a teaspoon scoop the cookie dough. Place on the cookie sheet and press lightly. Bake for 6-7 minutes and remove immediately, leave the cookies on the cookie sheet until they start to cool off.
