Strawberry Cake Mix Cookies

Are you ready for Valentine's Day? Do you even like the 'fake' holiday? 
Yes, that's right I said fake and no I am not bitter, mind you. I've always had this initial thought that this holiday is not what it should be. It is the day of the year when all of those non-romantics are ever so romantic and shower their loved one with gifts and suddenly like Cinderella at the strike of midnight everything is forgotten, life goes back to normal and what love was is no more...until the following year when it happens all over again.
Does this apply to everyone obviously not, but the holiday does have that concept hidden under all the choco-roses and singing gorillas...now no there is no personal Valentine's Day horror story that has taught me better, and no am not going to deny anyone's overstuffed teddy bear or lovely roses...hey I am girl and girl is in love so logically I will have Valentine's Day expectations. 
So cut me some slack :p








Cookie Tower!
So if you're thinking of something easy to make for someone special...or yourself whatever makes ya happy, this is THE recipe! No need to go out and buy flour...which you may not even use after that, or try and go out on a hunt for all strawberry extract, or flavoring or oooh rose paste! Yea...no just get yourself a cake box and sha-la-la-la cookies!

The inside was soft and chewy, very cakey too!
*Note: The instructions on some boxes depending on brand will tell you to add 3 eggs because it's assuming you're baking a cake...ignore what the box says and only use 2 eggs no matter what, okay? By using 2 eggs the dough has the normal cookie-dough consistency.

2 eggs is just right!
Recipe makes about 23 cookies


Strawberry Cake Mix Cookies

Ingredients:
  • Your choice strawberry cake mix box
  • 2 eggs
  • 1/3 cup oil
Directions:

Preheat oven 350F (if using a non-stick cookie sheet) if you are not using a non-stick cookie sheet preheat oven to 375F. In a mixing bowl, combine cake mix, eggs and oil and with a spatula mix until all ingredients are combined. Once it's combined and the dough is thick, you can start using your cookie scooper and place your cookie dough balls onto the cookie sheet. Bake for 6-8 minutes and voila!

Now you can make these and add frosting or what have you, but be warned that these cookies are a little sweet...or at least they seemed so to me, but then again I am a diabetic so maybe it was just me.

  2. Valentine's Day is definitely a controversial holiday, but these cookies would make anyone forget about the holiday altogether! They look so pretty and delicious. I love that they're from a cake mix.

  3. Thank you ladies! Yea! I definitely thought of the strawberries and would have been great too, but I ate them all in a salad...hahaha. I do have a strawberry-something recipe that requires fresh berries...will bake soon! :)
