So last post I mentioned I had made 3 dozen cupcakes: 1 red velvet, 1 vanilla, and 1 purple velvet (same recipe as the red velvet I just added 1 small package of purple gel food coloring). For this recipe the buttercream frosting was just that the perfect frosting for this very soft and thick cupcake.

Happy Birthday Vanilla Cupcakes
- 1 1/2 cups flour
- 1 cup sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 stick of unsalted butter, room temperature
- 1/2 cup sour cream
- 1 large egg
- 2 large egg yolks
- 1 1/2 teaspoons vanilla extract
Preheat oven to 350 F. Place cupcake liners onto muffin pan. In a large mixing bowl whisk together the flour, sugar, baking powder, and salt. Make sure the dry ingredients are well combined. Then add butter, sour cream, egg and egg yolks, and vanilla; mix at a medium speed until it's smooth and fluffy. Now pour each cup a little over half way. Bake for 22 minutes. Cool the cupcakes for 15 minutes until you frost them otherwise the frosting will get all melty.
- 1 stick of unsalted butter at room temperature
- 2 1/2 cups powdered sugar
- 1 tablespoon vanilla extract
- Pink sugar (optional)
Very simple frosting and oh so fantastic in the mouth! In a large mixing bowl place the butter and powdered sugar and mix at low speed for 5-6 minutes or until it is well combined. Add the vanilla and mix for an additional 3 minutes.
Making this many cupcakes was hard work...I may want to reconsider my hypothetical dream of being a baker. But they were sooo good!
