Red Velvet Birthday Party Cupcakes with Cream Cheese Frosting


Last weekend or some weekends ago it was Amy's (my niece) 8th birthday and of course being her favorite aunt (or the only one) I made her some birthday party cupcakes. Now, I will warn you these cupcakes are  THE BEST cupcakes I have made or tried...yeah that good.

I asked my sister how many kids were going to be at the party, her answer "oh her whole class". WHAT? So yes, there would be about 20 second graders and parents at the party AND our family. So how many cupcakes was I making "48". I asked the birthday girl what flavor cupcakes she would like for her party. She wanted 'Red Velvet with Cream Cheese Frosting' and 'Vanilla with Buttercream Frosting' however, in the making process a third flavor developed and it was very yum.

These are vanilla, red velvet, and deep purple cupcakes!

I have made different types of cupcakes before but this time I used a few ingredients I hadn't before and was a little scared that they wouldn't turn out so good but boooy was I wrong. This post will be for the Red Velvet cupcakes with cream cheese frosting, of course. I woke up early like around 8 am and began my cupcake bakeathon I finished around 2 pm. The party was fun, very lively and everybody loved the cupcakes, so yay: success! :)

Red Velvet Birthday Party Cupcakes w/Cream Cheese Frosting

Ingredients
  • 4 tablespoons unsalted butter, at room temperature
  • 3/4 cup sugar
  • 1 egg
  • 2 1/2 tablespoons unsweetened cocoa powder
  •  2 tablespoons red food coloring
  • 1/2 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 cup + 2 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 1/2  teaspoons distilled white vinegar
Directions

Preheat your oven to 350F. With a mixer cream the butter and sugar until it's fluffy. Then turn your mixer on high speed and add in the egg to the butter/sugar mixture. To this mixture add the unsweetened cocoa powder, vanilla extract and food coloring. Mix all these ingredients for  5 minutes until they are well incorporated. Once the color has settled add the milk gradually and mix on low speed and then add the flour, salt, baking soda, and vinegar. Continue mixing on low speed for another 4-5 minutes until all ingredients are combined. Pour batter onto cupcake cups and bake for 20 minutes exactly. Let them cool for 15 minutes before frosting.
I made sure to fill the liners a little more than half way so that the cupcake pops when it bakes

Cream Cheese Frosting 

Ingredients
  • 1 stick of butter, at room temperature
  • 4 ounces cream cheese at room temperature
  • 2 1/2 cups powdered sugar
  • 1 tablespoon vanilla extract 
Directions
In a large mixing bowl and with a mixer combine cream cheese and butter until fluffy, add vanilla extract and continue mixing for 1 minute. Gradually add the powdered sugar and mix for 6-8 minutes until the sugar is very well incorporated. 


These cupcakes had a very nice texture, that was puffy soft and at the same time bread-y. In general cupcakes are too soft and squishy but these were not. Their sweetness was just right, the cream cheese frosting made them super delectable.

  1. That cupcake looks so delicious and perfect for birthday parties! I shall share this recipe for my friends too. But I'm afraid I can't eat too much sweets because I just recently had my cavities removed by my dentist in Huntersville NC.

    1. Oh no! Well may be just a little sweet stuff is okay! May be you can skip the frosting (I personally always skip the frosting).
