So last week was my niece's 15th birthday! I can't believe she's grown so much, it seems like yesterday that she was a baby. I was 7 years old when she was born so we practically grew up together.
She's awesome. And like any awesome person I asked her what kind of cake she would like for her birthday...her answer "chocolate cake" yum so I got creative of course :)
Enchanted Chocolate Lava Prince Charming Cake
Ingredients
- 1 cup all purpose flour
- 1/2 cup unsweetened cocoa
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup canola oil
- 3 large eggs
- 1 cup sugar
- 1/2 cup buttermilk
- 1 teaspoon vanilla extract
- chocolate syrup as much as you would like
- Maraschino cherries
- Jet-Puffed Mallow Bits (chocolate)
Directions
Preheat oven at 350F. I used a Bundt pan, but this recipe can be used on a round 9 inch springform pan as well. Cover the pan with unsalted butter or cooking spray and set aside.
In a large bowl combine flour, cocoa, baking powder, baking soda, and salt. Using a whisk make sure all ingredients are well combined.
In a medium bowl combine oil, and eggs and beat them well using a mixer at medium speed. Slowly add the sugar and mix well for 1 minute. Now, add the flour mixture and mix at a low speed until batter is smooth. Finally add the buttermilk and vanilla extract and continue to mix for a minute.
Pour batter into your baking pan and bake for 25 to 30 minutes or until a toothpick inserted in the center comes out clean. Make sure to cool your cake in the pan for 10 minutes before removing it from the pan. Once cake has been removed from the pan, drizzle with chocolate syrup and place maraschino cherries around the cake, the cherries should stick easily to the cake with the syrup. Sprinkle with marshmallows as you like.
